I found the most amazing almonds at Target for the fall season. My husband loved them so much that he literally ate the whole bag in one sitting. So what did I do, I bought a second bag .. He proceeded to eat that one as well.
He said “please don’t bring these in the house anymore, I can’t control myself” ..
So I came up with a healthy alternative that gave the yummy pumpkin taste without the guilt.
Ingredients
3 Cups Raw Almonds
3 Tbsp Coconut oil (melted)
2 Tbsp coconut palm sugar
3 tsp pumpkin pie spice
3 tsp cinnamon
1 tsp vanilla
*lightly drizzle with Grade A/B Pure maple syrup to taste
Directions
- Pour melted coconut oil over almonds, stir to coat. Add sugar, pumpkin pie spice, cinnamon, and vanilla.
- Stir to combine and drizzle maple syrup over the top.
- Place nuts on a parchment lined pan, bake at 300 for 18-20 minutes stirring after 10 minutes.
