I am obsessed with brussel sprouts … I could eat them for breakfast lunch and dinner!
I also love a good refreshing summer salad on those hot summer nights or mid afternoon on the deck.
Here is a great recipe to have for your summer slim down plan!
Ingredients:
2 cups of sliced brussels sprouts
1/2 Granny Smith apple (chopped and diced)
1/2 cup quartered green grapes
1/2 cup cashew pieces
2 chicken breasts diced and chopped into small pieces
1/2 red onion, finely diced
Vinaigrette:
2 TBSP Apple Cider Vinegar
1 teaspoon quality dijon mustard
1 TBSP avocado oil
1 TBSP raw honey
1/2 tsp garlic salt
dash of pepper
Directions:
In a large bowl chop brussel sprouts into tiny pieces (or you can buy them pre chopped too for a time saver). Slice the Granny Smith apple into small matchstick pieces. Grab a handful of grapes and quarter them, you should end up with about a half cup. Chop the half cup of cashew pieces. Finely dice the red onion and add the cooked chicken pieces.
For the Vinaigrette:
Add all ingredients to a small bowl and whisk until smooth. Pour over the Brussels sprouts salad and toss to bring together.
