Growing up I always LOVED Eggnog, but it did not love me back. I literally would get the worst stomach aches ever but would just suck it up for this delicious treat that only happens once a year!
Well now I don’t have to suffer and it still has that great Eggnog taste!
Ingredients:
1-14 ounce can full fat coconut milk
1 cup of coconut creamer or coconut half and half
4 egg yolks
1/2 cup maple syrup or honey
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
*Top with pumpkin spice if desired
Directions:
In a large bowl Whisk egg yolks until they lighten in color. Mix in the coconut creamer, then add the coconut milk, the vanilla extract and the spices – mix all together.
Next, heat the mixture in a saucepan over medium low heat. Add maple syrup to the mixture and stir. The maple syrup will start to melt into the mixture as it heats up. You will want to stir frequently and allow the mixture to thicken.
When mixture coats a spoon the mixture is done. Let it cool before refrigerating.
