Ingredients
3 chicken breasts (diced)
3 tablespoons of avocado oil
Kosher salt and freshly ground black pepper
1/4 c Sun-dried tomatoes
2-3 tablespoons of full fat coconut milk
1/4 cup cut up grapes ( prefer purple)
3 tablespoons curry powder
2 cloves of garlic (minced)
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions,
1 cup whole raw cashews
1/4 cup of unsweetened shredded coconut
Directions
Chop your chicken into cubes or shred it, and add to a medium mixing bowl
Add scallions, garlic, curry powder, avocado oil, and 2 tbsp coconut milk, stir to evenly coat
Add sun-dried tomatoes, celery, grapes, and cashews, stir to evenly coat.
If there isn’t enough dressing add another tbsp. of coconut milk
Add salt and pepper to taste
top with shredded coconut
Enjoy on its own, on a big plate of greens, in lettuce wraps, or on top of sliced cucumber
