I am a HUGE Fan of albacore tuna! I have always loved it. In fact in college, my roommate and I were actually on the “tuna diet”. It was inexpensive, tasty, and a good source of protein!
Here is a great recipe that puts a delicious new spin on an old-fashioned tuna can….
Ingredients:
2 5 ounce cans Albacore Tuna in water or olive oil
1 tablespoon of coconut oil
1 teaspoon of creole seasoning
1/2 chopped red onion
1/2 teaspoon of cumin
1/8 tsp pepper
2 cage-free eggs
1 cup of almond flour
Directions for Chipotle Mayo:
1/4 cup Paleo mayo
1 tsp chili powder
1 tsp lime juice
Directions:
Open albacore tuna and drain the water from the tuna.
In a small bowl, combine albacore tuna, chopped onion, eggs, creole seasoning, cumin, pepper, and almond flour. Mix well and form mixture into 5 equal size patties.
In a medium skillet place 1 tablespoon of coconut oil and cook tuna patties over medium heat, turning occasionally to make sure both sides cook evenly.
For Chipotle Mayo: In a small bowl, mix mayonnaise, chili powder, and lime juice. With a large spoon stir ingredients until completely mixed.
Place tuna cakes on a large plate and top with chipotle mayo.
