With St. Patty’s Day coming up this Sunday, I thought it would be fun to give a healthy spin on the infamous McDonald’s Shamrock Shake.
When I was growing up I was very lactose intolerant and I remember ordering this shake because of its deliciousness and then feeling like I had been hit by a truck after.
Now you can have the best of both worlds the great taste and a great feeling afterwards!
I hope you enjoy this delicious treat as much as I did.
Shamrock Shake:
Ingredients:
2 cups coconut vanilla ice cream (found at your local natural foods store)
Or I prefer to use Paleo Ice Cream (I will insert the recipe for this at the bottom of the page)
1 1/4 cups unsweetened Almond Milk or Coconut Milk
1/4 teaspoon mint extract
8 drops green food coloring
Directions:
Put all ingrediants into a food processor and mix, ( you may use a blender but the consistency will not be as thick).
Optional:
You could add lite whipped cream or cool whip to the top and use green sprinkles to make it more festive.
