This recipe is a fantastic one, for the fall season! I have made this for many parties, and it is always a favorite!
Pumpkin Bacon Chili
1 lb ground beef
1 onion diced
1 green pepper diced
1 jalepeno pepper
1 tbsp coconut oil
1 can (15oz) diced tomatoes
1 can pumpkin
4 strips of bacon diced
1 tsp cumin
1 tsp of pumpkin spice
1/2 tsp cayenne
2 cloves
1 tsp nutmeg
1/4 tsp salt
1/2 tsp pepper
2 avocado diced into 1 inch pieces
Directions:
In a deep pot, sautee the chopped onion and pepper and jalepeno (with no seeds) in coconut oil for several minutes over medium heat until soft.
Add in the beef and cook until browned.
Meanwhile, in another pan, cook the bacon until crispy and then break into pieces.
Pour in diced tomatoes, avocado, canned pumpkin, bacon, and spices into the beef and veggie mixture. Stir together and then reduce heat and cover pot to simmer for 30-40 minutes.
