A quick delicious lunch recipe in a pinch. It has terrific flavor and can be prepped the night before!
Ingredients:
3 medium cucumbers
1/4 cup pesto (you can use basil or artichoke pesto)
6 slices of avocado
6 ounces deli meat (you can use chicken, turkey, roast beef, ham use dilusso or boars head)
1 bell pepper, thinly sliced into sticks
1/2 cup spinach, shredded
toothpicks
Directions:
Slice the cucumbers lengthwise removing skin from the outside.
Spread about 1 teaspoon of pesto on each cucumber, then evenly distribute avocado, turkey, bell pepper and spinach on each. . Roll up and place seam down.
Stick a toothpick in the middle.
You Can be make a day ahead. Just store in an airtight container in the fridge and meal prep for the week!
