I got this great idea from my Mother-in-Law this past Sunday. She is doing Paleo, and was really missing her Tilapia Tortilla frozen fillets from Costco.
So I came up with this recipe to ease her pain!

Ingredients:
4 tilapia fillets
18 whole unsalted sweet potato chips (I get the trader joes brand)
1 jalapeno pepper , seeded and coarsely chopped
1 teaspoon lime juice
1/4 cup fresh cilantro
1/2 teaspoon chili powder
1-2 cloves of garlic
1-2 Tablespoons of olive oil
1/4 teaspoon ground cumin
1 teaspoon seasoning salt
1 egg , beaten
Directions:
Preheat oven to 375ºF.
In a food processor mix the jalapeno, cilantro, chili powder, cumin, onion powder, and salt. Add the tortilla chips and mix until it comes out to be small chunks. Remove the mixture and place on a plate.
Add the egg to a small dish and dredge each tilapia into the egg and coat each side. Place the tilapia in the chip mixture and pat the crumbs to the mixture to adhere to each side.
Put tilapia fillets onto a nonstick baking sheet and sprinkle Olive oil over the top of the fish. cook 14-17 minutes or until fish is flaky.
