I love mushrooms and fun ways to create new recipes with them. Here is a great variation of the ever so popular “Egg McMuffin”.
Ingredients
4 medium portabella mushroom caps (scrape out the interior gently with a spoon)
8 eggs
4 slices of bacon diced
1/2 cup of chopped onion
1/2 cup of chopped red pepper
1/2 tsp of pepper
1 tsp of garlic powder
1 tbsp coconut oil
Directions
Preheat oven to 400 degrees.
Hollow out mushrooms and place on a foiled baking sheet
In a skillet place coconut oil and chopped bacon on medium, let bacon begin to cook and then add onion, pepper, garlic, and red pepper. Continue to sauté until bacon is well done.
Place hollowed-out mushroom bottoms up on a foiled baking sheet.
Distribute skillet mix into the mushrooms and top with cracked egg over each.
Bake at 400 F for 15-25 minutes depending on how you like your eggs. If you cut into them and they’re too runny, you can always put the broiler on them for about 30 seconds to finish the outside.
