I made this recipe on Sunday and it was a winner! It was light, flavorful, and delicious the perfect compliment to the HOT summer weather!
Ingredients:
2-3 tilapia filets (I used frozen but fresh is great too)
1 can of italian diced tomatoes
2 cups of cauliflower
2 cups of broccoli
1 cup of halved brussel sprout
1 cup of sliced mushrooms
2 tablespoons of avocado oil (separated)
4 cloves of garlic (separated)
1 tsp of basil
1 tsp of oregano
1 tsp of rosemary
1 tsp of cilantro
1 tsp of lemon juice
Directions:
In a large skillet place 1 Tbsp of avocado oil and 2 cloves of garlic on medium to high heat. Let heat for one to two minutes. Next, place vegetables (I like to steam all of mine before cooking) and diced tomatoes and continue to sauté. Top with seasonings and allow to sauté on low for 10 more minutes.
In a separate on medium to high heat, pan place 1 Tbsp of avocado oil and 2 cloves of garlic and slice tilapia into pieces and toss into the oil and garlic pan. Top with lemon juice and pan fry for 5 minutes until tilapia is seared and lightly browned.
Place italian veggies in a bowl or plate and top with Tilapia.
Keep leftovers separated so they will both stay fresh.
