They were having a big sale at my local grocery store on chicken thighs, so I decided to create this yummy recipe! It had so much wonderful flavor and made the house smell delicious as well!
Ingredients:
1 bag of frozen chicken thighs
1 cup of full fat coconut milk
1 cup of red onion diced
1 bell pepper chopped
1 can of carrots (drained)
1 tsp of curry powder
1 tsp of garam masala
1/2 tsp of cumin
1 tablespoon of cilantro
2 cloves of garlic
1 tablespoon of coconut oil
8 red potatoes diced into quarters
4 tablespoons of green curry paste (you could also use tomato paste instead)
Directions:
In a large crockpot combine chicken thighs, potatoes, coconut milk, onion, pepper, and carrots. Next add in garlic, garam masala, cumin, coconut oil, curry, curry paste, and top with cilantro.
Cook on medium to high (so 4 to 6 hours) and serve.
