For the Academy Awards, I wanted to come up with something festive for the movie “the Martian”. The only thing he could grow on Mars was potatoes so I thought what better way to represent the movie than with yummy potato balls.
They were definitely the hit of party and even though the Martian didn’t win, my recipe sure won over the crowd!
Ingredients:
3 cups of mashed potatoes
2 tablespoons of grass-fed butter (melted)
2 teaspoons of garlic powder
1/4 cup of greek cream cheese (or regular full fat)
1/4 cup of parmesan cheese
1 tablespoon of cilantro
1/4 cup of full fat canned coconut milk
8 strips of bacon cooked and diced
2 – 3 tablespoons of coconut oil or full fat heavy creamer.
2 eggs
1 cup of almond flour
Directions:
In a large mixing bowl combine potatoes, melted butter, cream cheese, milk, and use a mixer on medium to medium high until completely mixed.
Next add garlic powder, bacon, cilantro, and stir. Form into small balls and place on a piece of parchment paper.
In a bowl whisk two eggs, and then in a separate bowl place 1 cup to 1 1/2 cups of almond flour.
In a large skillet place the coconut oil over medium to medium high heat and let it melt. Grab a potato round and place it in the egg mixture until covered with egg and then place it in the almond flour until it is covered.
Place the balls in the skillet and let cook for about 5 minutes on each side, or until completely cooked and lightly browned.
Let cool for 5 minutes and serve!
