We are all looking for that perfect finger food to ring in the New Year With ..
There are so many decisions and typically most finger foods do not align with your health and fitness goals.
Well here is the perfect complement that will keep you feeling great for you party and get your 2016 started off right!
Ingredients:
1 pound medium-sized shrimp peeled, deveined and tails removed
1 teaspoon of creole seasoning
1 1/2 teaspoon fresh lime juice (divided)
1 Tablespoon of coconut oil
1 ripe avocado (you can use holy guacamole packs to be quick)
2 teaspoons of garlic powder
2 sweet potatoes (sliced into 1 inch rounds)
1 tablespoon of salsa
Cilantro, for garnish (optional)
Directions:
In a medium frying pan place coconut oil until melted over medium heat. Next add shrimp, garlic, powder, creole seasoning, and 1 tsp of lime juice. Sauté until shrimp is cooked (pink throughout).
While shrimp is cooking in a small bowl mash avocado ( I use a potato masher or large fork). Add Salsa and 1/2 tsp of lime juice and set aside.
To make the taco, top sweet potato chip with a tsp of guacamole, then place one shrimp onto of avocado mix and top with cilantro leaf.
Lay out on a fun platter and everyone will be talking about your appetizer this NYE.
