One of the treats I looked forward to every year as a child was Egg Nog! It was delicious seasonal and put you right in the holiday spirit. Here is a great version that will be just the way you remember it and not sideline your health goals!
Ingredients:
2 C full fat canned coconut milk
2 C vanilla almond or coconut milk creamer
4 egg yolks
1/4 cup of maple syrup
1/4 cup of honey
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp of pumpkin spice
1/4 tsp of vanilla extract
Directions:
In a blender or food processor, combine all ingredients.
Process on high speed for 2 minutes until egg yolks are fully incorporated.
Place in the refrigerator for 30 minutes or until chilled and serve with cinnamon sticks or a shot of rum.
