Cereal is food that people love and feel they really miss when going to a clean eating type of food regimen. That morning crunch is comforting, delicious, and satisfying.
Here is a great recipe that will keep you in line with your goals, but satisfy that “am crunch”.
Ingredients:
1 1/4 cup of almond flour
1/2 cup of coconut flour
1/4 cup of coconut palm sugar
2 teaspoons of baking soda
3 teaspoons of vanilla extract
1/4 to 1/2 cup of unsweetened vanilla almond milk
Directions:
In a medium mixing bowl combine flours, bakings soda, sugar, cinnamon, almond milk, vanilla, stir until dough forms.
lay out parchment paper and place dough on paper then place a second piece of parchment paper and roll out the dough until you can’t get it any thinner. Take the top layer of parchment paper off the dough.
Take a small pizza slicer, and cut dough into small squares. and transfer parchment paper onto a baking sheet. Place in the oven for 8-10 minutes or until sides are slightly brown.
Let the squares cool before breaking apart into cereal pieces. If the pieces don’t break off easily put the dough back in the oven for a couple of minutes.
Place some pieces in a bowl top with a little more cinnamon and palm sugar and serve over coconut milk, cashew milk, or almond milk.
*For added taste add cacao chocolate chips and/or banana.
