This is a delicious easy recipe that is perfect for the autumn season and a great recipe to add to your Thanksgiving recipe list!
Ingredients
2 pounds sweet potatoes, peeled and cut into 1-inch pieces
1/4 cup honey
2 tablespoons flaked sweetened coconut
2 tablespoons chopped raw pecans
2 tablespoons coconut oil
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon of pumpkin spice
1/3 cup unsweetened coconut flakes
1/3 cup chopped raw pecans
Directions:
Coat your slow cooker with cooking spray or grass-fed butter.
Place first 8 ingredients in slow cooker and toss to combine.
Cover and cook on LOW for 6 to 8 hours, or until potatoes are tender. Lightly mash mixture. Sprinkle topping over potatoes and serve warm.
