Ingredients:
1 lbs carrots, peeled and cut into chunks
1/4 cup of ghee or coconut oil
1 egg
1/2 tbsp coconut flour
1 tsp baking soda
1 tbsp maple syrup
1 tbsp honey
Sprinkle of cinnamon
sprinkle of pumpkin spice
sprinkle of nutmeg
1/2 teaspoon of vanilla
Directions:
Preheat oven to 400 degrees. Steam carrots in a steamer or microwave safe dish and microwave to steam.
Place carrots and all other ingredients in a food processor or blender and purée until smooth and combined.
Pour into a 1-1.5 quart casserole. Bake at 400 for 15 minutes.
Lower oven temperature to 350 and bake for 45 minutes.
