I absolutely LOVE mushrooms! They are so delicious and nutritious. I was eating at a restaurant saturday night and came across these delightful treats and thought I would create my own healthy version of them.
Now you can enjoy fries with your burger and not feel guilty!
Ingredients
4 large portobello mushroom caps
Extra-virgin olive oil, for drizzling
1/4 cup olive oil
2 cloves of garlic
2 eggs, beaten
1/4 cup parsley
1 teaspoon of cilantro
1 cup almond flour
1 teaspoon of italian seasoning
Directions:
Scrape the gills off the portobello mushroom caps with a spoon. Brush caps gently with a damp cloth to clean them. Drizzle caps with oil to keep them from sticking to the grill pan and season the caps with italian seasoning.
In a small bowl whisk the eggs. In another small bowl place almond flour and parsley.
Slice the mushrooms into 1/2 inch strips. Place the strip in the egg mixture and coat, then place in the flour mixture and put it in the skillet.
In a large skillet heat olive oil, garlic, and cilantro. Cook “fries” over medium heat and let brown for 2 to 3 minutes each side.
