Zucchini Pasta with Avocado Cream Sauce
Ingredients:
4 Small Zucchini
2 Tablespoons of coconut oil
1 Avocado
Juice from 1/2 a Lemon
Salt n Pepper
Handful fresh basil
2 Tablespoons olive oil
3 Tablespoons coconut milk or just more olive oil
Olives to top pasta with, chopped.
6 oz of peeled shrimp
Directions:
Cut the zucchini into noodles. You can do this by hand or use a mandolin. Toss the zucchini with salt and set aside. This will help it dry out a little.
You can now chop your olives and start the cream sauce.
Add your avocado, lemon juice, olive oil and coconut milk and blend in your food processor or blender until creamy. Add in your basil and more olive oil if needed.
Heat a pan with coconut oil and toss in zucchini. You will only need to cook it a few minutes and medium heat. I like my zucchini to still be a little stiff. When the noodles are done throw your sauce into the pan while it is still a little hot and mix. Serve your pasta with some chopped olives and some pepper.
In a small saucepan saute shrimp with 2 garlic cloves until shrimp is cooked throughout.
Add to the zucchini pasta.
Serve.
