I know breakfast preparation can be very hard for most of us. It is the one meal that most people skip due to poor planning and time restraints. I am always looking for grab and go recipes that are healthy and delicious and will leave you with “NO EXCUSE” to skip one of the most important meals of the day!
Here is a great recipe that will be delicious and you can place in the microwave for 1 minute and you are good to go!
Ingredients:
4 hardboiled eggs, peeled
2 tablespoons coconut oil
1 small yellow onion, finely chopped
1 1/2 pounds ground turkey, ground pork, ground beef
1 teaspoon of rosemary
1 teaspoon of cilantro
1/2 cup almond flour
1/4 – 1/2 cup of unsweetened almond milk
2 garlic gloves
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/2 teaspoon black pepper (a pinch)
1 raw egg
1 teaspoon of Dijon mustard
Directions:
Recipe Tip: To hard boil the eggs, completely cover the eggs with cold water in a deep pot and bring the water to a boil. As soon as the water begins to boil, turn off the heat and put a lid on the pot. Let the eggs sit for 12 minutes, then drain. Put the eggs in a bowl of cold water to cool down before peeling.
Preheat oven to 325 degrees
In a skillet, heat the coconut oil over medium. Add the garlic and onion and sauté until soft.
In a large bowl combine the onion with the ground meat, cilantro, rosemary, fennel seeds, nutmeg, allspice, black pepper, almond flour, milk, and raw egg. Mix well with your hands.
Separate the meat into 4 even portions. Roll each portion into a ball then flatten the meat into a large thin patty. Set a hardboiled egg in the middle and fold the meat over the egg and shape it with your hands until meat is covering the egg completely. Then top with Dijon Mustard.
In a baking pan, bake the meatloaf uncovered for 35 minutes, or until the there is no pink in the middle of meatloaf or temperature is 165.
Remove from the oven and let the meatloaves rest for 10 minutes before serving.
*Double the batch and freeze them so you can place in the microwave and reheat in a grab and go situation!
