I recently had a client inquire about chia seeds. He wanted to know what the benefits where (if any) and how you used them in recipes. So it got me thinking of a recipe that would taste delicious, a great morning snack (which is hard for all of us to find) and could be very beneficial to our health all at the same time! With strawberry season vastly approaching I figured this would be a great way to combine the two and make a delicious treat!
Ingredients:
2 cups of freshly diced strawberries
1 1/2 cups (or one 13 1/2-ounce can) full fat coconut milk
1/4 cup honey ( you can also use maple syrup)
1 scoop of vanilla whey protein powder
3/4 teaspoon finely grated lime zest
1/2 cup chia seeds
Directions:
Place the strawberries, coconut milk, honey, whey, and lime zest in a blender and blend until smooth. You can also use a good old-fashioned food processor.
Then in separate bowl place chia seeds at the bottom and then pour strawberry mixture over them. Mix thoroughly with a large spoon until chia seeds are mixed throughout the strawberry puree.
Cover and refrigerate for at least 4 hours the longer you let the pudding settle the thicker it will become. The pudding will taste great for up to 5 days. You can also freeze it as well and place it in smoothies to be used later. I like to spoon mine into small ramekins and serve.

Recipe Notes
- Sweeteners: Honey may be substituted with other sweeteners like maple syrup, agave nectar, date syrup, etc. Adjust amounts for desired sweetness.
- Garnish ideas: strawberries, coconut flakes, lime zest, chopped or slivered nuts, cocoa nibs, fresh mint.
