These are great for entertaining. We recently had a get together and made these and they were a HUGE hit at the party! With Super Bowl Sunday this coming weekend this will be the perfect item to bring to keep everyone talking about the meatballs not footballs.
8-10 pieces of bacon cut in half
15-20 toothpicks
1 lb ground pork
1 lb of lean ground grass-fed beef
2 eggs
1 cup of coconut flour
1/4 cup of coconut creamer
1/2 cup of unsweetened almond milk
3 tablespoons of water
1 tsp salt
1 tsp of creole seasoning
1 tsp black pepper
3 tsp of garlic powder
1 tsp ground cumin
4 oz greek cream cheese
1/2 cup raw cheddar, shredded
1 Tbsp salsa verde
To Form the Meatballs: take a small patty and press your big thumb in the middle to create a divot. Then with a small spoon place a tsp of filling in the center. Mold patty around the sides and then top with more meat.
Place meatballs on the parchment paper (should make about 15 – 20).
Next wrap a half of piece of bacon around the outside of the meatball and pierce with a toothpick. Repeat this with all the meatballs.
Place in the oven for 20 – 25 minutes or until meatballs are cooked throughout and there is no pink in the middle.
Let cool for 5 to 10 minutes and serve.
