Many of my clients have been requesting a good soup recipe for this very cold winter weather! Here is a yummy comfort food that tastes delicious and won’t leave you hiding in your “comfy clothes” this season.
Ingredients
I head of cauliflower
1 cup full fat canned coconut
3 sweet potatoes
3 and1/2 cups chicken or vegetable broth
1 bunch of green onions
8 pieces of bacon
Salt and pepper to taste
2 Tbs coconut oil
1/4 cup of grass-fed butter
3 cloves of garlic
1 cup of shredded almond cheese or raw cheddar
1/4 cup of almond flour
Directions
In a large crockpot at the cup of coconut milk and butter.
Chop the cauliflower adding it to the pot.
Next dice the sweet potatoes and add those to the pot as well
Next cut the bacon into small pieces and add to mixture.
Put the coconut oil and almond flour, salt and pepper, garlic, chicken broth, and garlic.
Let the crock pot cook on medium to high for 4-6 hours.
Ladle the soup into a bowl and top with green onion and cheese to your liking.
