I love Kale and there is nothing better to me than roasted brussel sprouts to go with it!
Here is a great autumn salad that goes with just about any meal.
1 bunch of kale
12 brussel sprouts cut in halves
1/4 cup of diced red onion
2 cloves of garlic
1/4 cup raw sliced almonds
3 Tablespoons of unsweetened dried cranberries
1/2 avocado diced
1 tablespoon of olive oil
1 teaspoon of balsamic vinaigrette
1/4 cup tahini
2 tablespoons white wine vinegar
2 teaspoons Grade B maple syrup
1/2 teaspoon of ginger
1 garlic clove minced
pinch of red pepper flakes
1/4 cup water
In a medium sauce pan place olive oil, garlic, balsamic, brussel sprouts, and onion. Heat on medium until brussel sprouts are cooked throughout and onions are slightly browned. Remove from heat and place in the kale mixing throughout.
In a small mixing bowl, whisk together the tahini, vinegar, garlic, cumin, maple syrup and red pepper flakes. Whisk in the water until the mixture is smooth and creamy.
Pour the dressing over the kale and sprouts and mix well.
Last, toss in the dried cranberries and avocado and perform one final toss.
