I recently took a field trip to the Apple Orchard this weekend and had a tremendous time hand picking delicious apples right from the trees!
I love apples, but I never realized how many wonderful recipes you can make with them!
Here is a great Apple Fritter recipe for breakfast, an afternoon snack, or delicious dessert.
1/4 cup coconut flour
1/2 cup almond flour
1 egg
½ tsp ground Celtic Sea salt
2 medium apples, peeled and shredded ( I use pink lady or gala)
1/4 cup of pecan pieces
1/4 cup melted grass-fed butter
1/4 cup honey
2 Tablespoons of unsweetened vanilla almond milk
2 tablespoons of coconut half and half
1/4 tsp of cardamom
1/2 tsp cinnamon
1/8 teas fresh nutmeg, grated
coconut oil for frying
Add the coconut flour, almond flour, salt, cardamom, cinnamon, and nutmeg to a mixing bowl.
Mix in the milk, cream, eggs, honey and butter.
Now add in the shredded apple, pecans, and stir thoroughly.
Grab two spoons and scoop the batter into one spoon and press it with the other spoon to keep it flat. You want flatter fritters so that they cook all the way through.
Drop the fritter in the hot oil and cook until golden brown on both sides.
Let the fritters rest for one minute and then serve immediately. They are best when hot!
