Some of us our up to our eyeballs in zucchini and we don’t know enough recipes to keep up!
Here is a great paleo zucchini bread recipe that is great for breakfast, snacks, lunches, and even dessert!
Ingredients:
1 ¼ cups almond flour
1/4 cup of unsweetened coconut flakes
¼ cup unsweetened cocoa powder
¼ teaspoon salt
½ teaspoon baking soda
1 scoop of chocolate whey protein powder
1 teaspoon of cinnamon
¼ teaspoon vanilla
¾ cup zucchini, grated
Directions:
In a large bowl combine almond flour, coco powder, salt, whey, cinnamon, and baking soda; stir.
In a small bowl whisk the eggs and then combine coconut oil, honey, and vanilla.
Pour egg mixture into the flour mixture and stir.
Next add the shredded coconut and zucchini
Pour batter to a greased loaf pan
Bake at 350° for 35-40 minutes
Cool for an hour
