Squash is full bloom so I thought this would be a great opportunity to share an amazing casserole recipe that tastes great and you can utilize a lot of squash. This recipe goes great with Steak and Pork Recipes too.
Ingredients:
2 lbs of yellow squash (cut in to inch quarters)
2 eggs
1/2 onion diced
1/4 cup of unsweetened coconut or almond milk
1/2 cup of almond flour
2 teaspoons of garlic powder
1 teaspoon of creole seasoning
1/4 cup of grass fed butter melted
1/2 cup of parmesan cheese
dash of pepper
Directions:
Cut squash and onion and toss into a large casserole dish.
In a separate bowl whisk eggs then combine garlic, melted butter, milk, pepper, and creole.
Pour egg mixture on top of the squash and make sure the squash is completely covered with the mixture (if not make sure to stir it till it is).
Sprinkle the parmesan cheese and almond flour on top.
Place in the oven at 350 for 30 minutes or until browned on top.
