12 oz fresh blackberries
1 teaspoon of honey
1 1 /2 tablespoon water
For the Cheesecake Layer:
6 oz cream cheese
4 tablespoons unsweetened almond or coconut milk
2 tablespoons fresh lime juice
1 1/2 teaspoon vanilla extract
1/2 cup palm sugar
Directions:
Add the blackberries, honey, and water to a medium saucepan. Cook over medium heat, stirring periodically, for about 10 – 15 minutes, or until they are easily broken with a wooden spoon.
Pour the berry mixture into a blender, until it is smooth. After blended, cover and refrigerate the blackberry puree for at least 30 minutes.
While the blackberry mixture refrigerates, beat the cream cheese, milk, lime juice, vanilla, and sugar using a hand mixer whip until smooth. Set aside in the refrigerator until blackberry mixture is ready.
To prepare the popsicles, layer the blackberry puree and cream cheese mixture in popsicle molds. Place popsicle sticks in the center and freeze until solid.
