This is a fantastic snack for those warm summer days. It has a great mix of flavor and refreshing taste that will leave you more than satisfied.
I like to eat this as my afternoon snack or with a side salad for my lunch. I know snacks choices can be the hardest so make sure to add this one to your repertoire!
Ingredients
1 lb. cooked shrimp, peeled (weight after peeled)
1 hard-boiled egg diced
2 celery stalks, chopped
1/4 cup of red pepper diced
1/4 cup red onion, chopped
2 tbsp. light olive oil mayo
1 teaspoon of Dijon mustard
1 teaspoon of olive oil
1 teaspoon of garlic
dash of fresh ground pepper
1/2 teaspoon of parsley
1/2 teaspoon of rosemary
1/2 teaspoon of thyme
1 teaspoon of white wine vinegar
30 thin slices cucumber (about 1 large)
chopped chives for garnish
Directions:
In a medium bowl place diced peeled shrimp, onion, celery, red pepper, egg, and garlic.
Next add mayo, mustard, olive oil, vinegar, and mix until it is evenly distributed throughout shrimp mixture.
Now add parsley, rosemary, thyme, and pepper and mix shrimp again.
Top with chives and serve over sliced cucumber chips.
