Spring is here and the perfect light treat to fit your spring craving are coconut Lemon Meltaway cookies. I was looking through Pinterest yesterday and came across these delicious treats on this site called “Addicted to Veggies”. This site is great for other recipes as well, but this one really caught my eye.
Coconut-Lemon Meltaway Cookies
Makes roughly 22 to 24 Cookies
Dry Ingredients
1 1/2 cups Almond Flour
1 1/2 cups dried Shredded Unsweetened Coconut
1/3 c Coconut Flour
2 big pinches of Salt
Directions:
Mix all of your dry ingredients together – set aside and move onto the next step.
Wet Ingredients
6 Tbsp Agave//or//Grade B Maple Syrup//or//Raw Organic Honey
4 Tbsp Lemon Juice
2 tsp Vanilla
1 Tbsp Lemon zest (Tip: Zest your Lemon before you juice it)
1/4 cup plus 1 tablespoon of melted coconut oil
Directions:
Mix together all of the above ingredients in a small bowl except oil with a mixer on medium speed. Once mixed throughout add coconut oil until your batter and slowly add dry ingredients until batter thickens.
Next place the dough in the fridge for about an hour or until completely chilled.
Place a sheet of wax paper on a flat surface and begin to roll into small balls, when all the dough is made into cookie balls place back in the fridge or serve. Do not leave out or they will melt.
*For added deliciousness roll cookies in unsweetened coconut, or top with a sprinkle of palm sugar.
