I am a huge fan of veggies, I could eat them in the mounds out of the bag and never get tired of them.
Unfortunately most people do not share my love of these healthy green delights.
One of the reasons I feel people are so “anti” veggie is because they are not preparing them properly. Have fun with your veggies; use healthy oils like coconut, sesame, or olive oil. Use fun spices to really jazz it up and make it taste completely different each time.
Here is a great asparagus recipe to start you on your new varying vegetable journey….
asparagus Au Gratin:
Ingredients:
1 pound asparagus (You can use white asparagus too)
3 tablespoons grass-fed butter melted
1/4 cup unsweetened almond or coconut Milk
2 teaspoons of garlic powder
1 teaspoon of onion powder
Pepper to taste
1 tablespoon Italian Parsley minced
1/2 tablespoon Meyer Lemons zest
1 – 2 tablespoon Parmesan Cheese grated
2 tablespoons Almond Flour
Directions:
Preheat Oven to 400 degrees.
In a small bowl combine melted butter, milk, lemon, and parsley. Place asparagus on an aluminum foil lined baking sheet and pour mixture over the top. Next sprinkle with onion and garlic powders, almond flour, and pepper. Last top with Parmesan Cheese, and place in the oven for 15 -20 minutes or until asparagus is lightly browned and cheese is melted.
