For many of us that are following the Paleo lifestyle one of our go to snacks or treats are Larabars. They are delicious and nutritious but can leave us feeling depleted in our wallets.
Here is a great at home recipe to keep you and your wallet satisfied….
Ingredients:
1 cup raw unsalted cashews
5 medjool dates, pitted (or 1 cup of regular dates)
1/4 cup of dried cranberries
pinch of sea salt (optional)
Directions:
- Pulse cashews in your food processor until finely chopped. Empty the nuts into a bowl.
- Place the dates and cranberries into the food processor and grind until roughly chopped into small pieces.
- Now add the cashew nuts back to the food processor with the dates, add a pinch of sea salt if using, and pulse until well combined.
- Form into bars.
- Store in an air tight container or wrap individually in plastic wrap for convenience and refrigerate.
