I had a member bring in a bunch of figs from her fig tree. When I saw them, I thought to myself… “What exactly can I do with these?”….. I found this great recipe from Elena’s Pantry and tweaked a little to make my own. These are great bars for breakfast, before and after a workout, and a little dessert too! Vanilla Fig Bars
- 1 1/2 cups almond flour
- ⅓ cup unsweetened shredded coconut
- 1 scoop of vanilla whey protein
- ⅛ teaspoon celtic sea salt
- ½ teaspoon of vanilla
- 1/8 cup of unsweetened vanilla almond milk
- 1 cup dried figs, soaked in ½ cup water for 12 hours
Directions:
- Place almond meal, shredded coconut, and vanilla whey protein and stir
- Combine vanilla, almond milk, and salt and mix
- Chop up the figs and place them in the coconut mixture and stir until evenly distributed.
- Press mixture into an 8×8 pan
- Refrigerate for one hour
- Cut into 16 squares
- Serve
