I found this recipe on a website www.friskylemon.com. These are great after school treats and breakfasts on the go.
Banana Chocolate Chip Muffins
Ingredients:
2 1/4 cups almond meal
2 ripe bananas
1/4 tsp sea salt
1/2 tsp baking soda
1 Tbsp cinnamon
4 Tbsp butter (or coconut oil)
3 eggs
splash of vanilla extract
1 cup 60% cacao bittersweet chocolate chips
Directions:
In a large bowl, mash the bananas with a fork, and added the eggs, softened butter and vanilla.
Combine the almond meal, sea salt, baking soda and cinnamon in a smaller bowl and added the dry ingredients to the wet little by little. Then add the chocolate chips.
lined a muffin tin with muffin paper
Scoop 1/4 a cup of batter into each paper,
bake at 350 F for 15 minutes.
Let cool and serve.
