This recipe was a childhood favorite of my husbands. Unfortunately it was loaded with Junk as well, so I devised a recipe that was delicious and beneficial for your body.
Nacho Chicken
Ingredients:
1 can of gluten free cream of chicken soup ( you can use cream of mushroom too)
1 cup of raw or almond cheese
6 0z of diced green chiles
1/2 cup of onion diced
1 to 2 cups of crushed sweet potato chips
4 cups of cubed or shredded chicken
1 cup of salsa
1 tablespoon of olive oil
Directions:
place olive oil in a large skillet with onion and diced chicken. Cook until chicken is cooked throughout. Add green chiles, cream of chicken, and salsa and let simmer for 5 minutes.
In a 9×9 pan or casserole dish combine skillet ingredients, add 1 cup of crushed chips and stir till chips are mixed in. Then top with Cheese and the other cup of chips.
Place in the oven at 350 for 20-25 minutes, let cool before serving.
