Here is a delicious recipe that I have made as muffins and pancakes and they are both delicious!
Ingredients:
1/2 cup almond flour
1/2 cup of unsweetened shredded coconut
1 heaping scoop of vanilla whey protein
1 teaspoon of vanilla
1 tablespoon palm sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1/2 cup of unsweetened vanilla almond milk
1/2 cup of vanilla coconut creamer
2 tablespoons olive oil
1 ripe banana, mashed
1 tablespoon of sunbutter or raw almond butter
Directions:
Preheat oven to 350…
Combine almond flour, protein powder, unsweetened coconut, palm sugar, baking powder and salt. In a separate bowl, mix together egg, milk, creamer, olive oil, vanilla and bananas. Last in egg mixture put in sunbutter or almond butter and mix till batter is smooth throughout.
Add egg batter to flour mixture and mix or beat for 2 min until there are no lumps in the batter.
Pour batter 3/4 of the way into your muffin tins and heat for 18 to 22 minutes until lightly brown on top.
Recipe makes 8 muffins…..
