I created this delicious recipe to throw a new twist on a classic spaghetti dish! I hope you enjoy!
Ingredients:
2 tablespoons of olive oil
3 Tablespoons of Pesto Sauce
1 Can of stewed tomatoes
1/2 onion chopped and diced
1 lb of chicken diced
1/4 cup of pine nuts
1 garlic clove
1 cup of asparagus chopped
1 cup of broccoli chopped
1/2 cup of artichokes
1 spaghetti squash
Directions:
In a large skillet pour olive oil, pesto, onion, broccoli, asparagus and chicken over medium heat until chicken is cooked throughout. Add garlic, stewed tomatoes, pine nuts, and artichokes and simmer for 15 to 25 minutes.
In a casserole dish place quartered spaghetti squash face down ( cut into 4ths) with 2 tablespoons of water into the microwave for 12 minutes (or until cooked throughout). Let cool for 5 minutes and then spoon out seeds. Use a fork to peel the spaghetti squash and place into a separate bowl.
Then top with Pesto Mix.
