Spiked Watermelon Popsicles
Ingredients
1/2 (3 pounds) large watermelon, peeled and cut into 1-inch chunks
3/4 cup watermelon flavored rum or vodka (I used Bacardi Razz, or Smirnoff watermelon).
1/2 cup chopped fresh mint leaves
Special equipment: 16 (1/4 cup) ice pop molds, 16 wooden pop sticks or wooden coffee stirrers at least 2-inches longer than the molds.
Directions
In a blender, combine the watermelon, and vodka. Blend until the mixture is smooth. Add the mint and pulse once to combine. Pour the mixture into the pop molds. Insert the wooden sticks all the way down the inside the molds. Freeze for at least 10 hours or preferably overnight.
To unfreeze the ice pops, insert the molds in hot water for 5 to 10 seconds. Serve immediately.
*For nonalcoholic Watermelon Pops, substitute 3/4 cup of fresh squeezed (from the orange) orange juice for the vodka.

Fit chic Watermelon Margarita
Ingredients
4 cups cubed watermelon
3 limes, 2 juiced and 1 cut into wedges for garnish
8 ounces tequila (preferably patron)
1/2 ounce agave nectar
1 ounce of Cointreau
1 teaspoon chili powder
Directions
In a blender, puree the watermelon until smooth. Pour the puree through a mesh strainer. Transfer the liquid to a pitcher and add the lime juice, tequila, agave, and Cointreau. Stir to combine.
In a shallow dish, add the chili powder. In a second small plate, add a tablespoon of roses lime or lime juice (something sticky so the chili powder will stick to the glass). Dip the rims of 4 margarita glasses in the juice, then coat them in the chili powder. Divide the margarita between the 4 glasses and garnish each with a lime wedge.
This will make your 4th of July that much more enjoyable!
